Onion Pulao
Ingredients:
- 2 cups boiled rice
- 2 big onions, cut into thin rings.
- 1/2 tsp. turmeric powder
- 1-inch piece ginger, minced
- 4 green chillies, minced,
- 1 tsp- sugar.
- A few curry leaves.
- 50 grams fried cashewnuts.
- Juice of 1 lime.
- 25 grams fried cashewnuts.
- Salt to taste.
- A pinch of asafoetida.
- 1 tsp. mustard seeds.
Method:
Heat 4 tblsps. ghee and add asafoetida and mustard. When the seeds stop popping, add turmeric, fry briefly, then add onions, ginger, curry leaves and chillies.
Cook till the onions starts changing colour. Put in the rice, salt and lime juice and sugar. Mix well and remove from fire.
Serve, grated with cashewnuts and raisins.
