Moong - Potato Rotla
Ingredients:
- 2 cups flour,
- 2 medium potatoes.
- ½ cup moong dal.
- 4 green chillies, minced.
- 1-inch piece ginger minced.
- Handful of sliced corriander leaves.
- Salt, chilli powder and lime juice to taste.
Method:
Boil the dal till soft and dry. Boil, peel and mash the potatoes and mix with all the above ingredients with the exception of flour. Put salt into flour along with enough water to from a stiff dough.
Divide the dough into small balls.Now roll out 2 balls of dough into small puries. Cover one puri evenly with a tablespoon of filling and cover it with the other puri, seal and pinch the edges together, sprinkle a little dry flour on top and roll out carefully and gently into a bigger round.
Shallow fry to a golden brown colour and serve piping hot after liberally applying ghee or butter to it.
