Mixed Vegetable Raita

 

Ingredients:

  • Beaten curds: 2 cups
  • Tomato: 1 small size but firm
  • Onion: 1 small
  • Cucumber: 1 small
  • Peeled and shredded beatroot: 2 tblsps
  • Green  chillies-minced: 2
  • Sliced coriander leaves: handful
  • Sliced mint leaves: few
  • Dry ginger powder: ½ tsp
  • Roasted and powdered cumin seeds: 1 tsp
  • Salt and chilli powder to taste

     

Method:

Peel and cut all the vegetables finely and mix with curds and add the rest of the ingredients.

Garnish with shredded beatroot.
