Mixed Vegetable Raita
Ingredients:
- Beaten curds: 2 cups
- Tomato: 1 small size but firm
- Onion: 1 small
- Cucumber: 1 small
- Peeled and shredded beatroot: 2 tblsps
- Green chillies-minced: 2
- Sliced coriander leaves: handful
- Sliced mint leaves: few
- Dry ginger powder: ½ tsp
- Roasted and powdered cumin seeds: 1 tsp
- Salt and chilli powder to taste
Method:
Peel and cut all the vegetables finely and mix with curds and add the rest of the ingredients.
Garnish with shredded beatroot.
