Methi Puri
Ingredients:
- 250 grams flour.
- 1 bunch fenugreek leaves.
- 4 green chillies, minced.
- 1 small tomato, peeled and sliced.
- Salt to taste.
Method:
Clean and slice the leaves.. Sprinkle salt on top and set aside for 15 minutes, then squeeze out all the moisture and wash in 3 to 4 changes of water, drain and put in a pan along with the rest of the above ingredients with the exception of flour.
Cover tightly and cook till the methi is tender. Remove from fire, cool and add flour, add enough water to form a stiff dough.
Divide the dough into small balls and roll each ball into a round puri or disc. Deep fry each puri to a golden brown colour. Drain and serve piping hot.
