Khichadi
Ingredients:
- 1 cup moong dal
- 2 cups rice
- 1 large onion, finely sliced
- 1/2 tsp. turmeric powder
- 1 tsp. cardamom seeds
- 4 cloves
- 1-inch piece cinnamon stick broken into bits
- 1-inch piece ginger, minced
- 1 tsp. cumin seeds
- Salt to taste
- 1 small onion, cut into thin rings.
Method:
Wash and soak the dal and rice separately in water for a few hours and then drain out the water. Heat 4 tblsps, ghee and add all the whole spices.
When they smell, put in the onion and ginger and fry to a light golden colour, add the dal and fry for 5minutes, put in the rice, turmeric and salt and fry again for 5 minutes.
Put in enough water to stand one inch above the level of the rice. Bring to a boil, reduce heat and cook till the rice is done. Remove from fire and set aside.
Fry the onion rings till golden, spread over rice and serve hot.
