Dry Fruit Kachori
Ingredients:
- Maida (very fine wheat),250 gms
- Ghee, 1 Tblsp
- Salt to taste
For Filling:
- Green peas: 250 gms-shelled and boiled
- Walnuts, Groundnuts, Cashew nuts, Raisins: 25 gms each
- Pistas & Almonds: 10 each
- Charoli: 1 tblsp
- Green chillies: 4, minced
- Finely sliced coriander leaves: 1 small bunch
- Grounded cumin seeds: 1 tblsp
- Garam Masala : 1 tblsp
- Salt, Chilli powder and lime juice to taste
Method:
Mix together flour and salt, rub in ghee and then add enough water to form a soft dough. Blanch and slice all the nuts finely. Mash the peas coarsely. Blend together all the flling ingredients.
Divide the dough into small cups, stuff with filling, gather the edges together and form into round and smooth kachories or cutlets. Het enough ghee for deep frying. Lower the heat and put the kachories upside down so that it does not open out.
Fry over a gentle heat to a golden brown colour. Drain and serve with chutney of your choice.
