Copra (Coconut) Pak
- 1 big coconut, finely grated.
- 1 litre milk.
- 250 grams sugar.
- A few drops of orange red colour.
- 25 grams sliced pistachio nuts.
- 1 tsp. cardamom seeds.
- 1 tsp. either essence of rose or kewda.
Place the milk in a heavy-bottomed vessel and cook over a slow fire till it turns and leaves the sides of the vessel. Remove from fire and set aside. Put 2 cups water in sugar and prepare a syrup of one-thread consistency.
Put in the thick milk and mix till smooth. Add coconut and cardamom seeds and keep on stirring till the mixture turns thick and leaves the sides of the vessel. Remove from fire and mix in the essence.
Put half of the mixture in a greased thali. Colour the remaining mixture a light orange red colour and put on top. Level the surface, sprinkle pistachios on top.
Cool thoroughly and cut in any shape you like. Store in airtight tins.
