Chiroti
maida
1/2 cup
Chiroti rava fine- 1/2 cup
Rice flour(wet) 2 Tblsp.
Salt a pinch
Ghee - 2 tblsp.
oil and vanaspathi - for deep frying
Powdered sugar - for dusting
For
wet rice: Soak wet rice in water for 1/2 an hour and strain
the water through a colander and pound the rice into a flour. Sieve
it through a fine mesh sieve.
Mix
rava, maida, 1 Tblsp. ghee, a pinch of salt together with the flour.
Add ice cold water and knead to a stiff dough. Keep closed under
a wet cloth. Knead well till the dough becomes soft and pliable.
Rub ghee with rice flour on a flate plate till it becomes white
and frothy. Divide the dough into 6 medium sized balls. Roll into
very thin chapathis. After rolling out the first chapathi, apply
2 tsps of prepared ghee , rice flour mixture, and place another
chapathi on top.
Repeat
the process till 3 chapathis are on one pile. Roll it tightly like
a mat from one end to the other to a shape of a cylinder. Cut the
ctlinder in to 7 or 8 pieces. Prepare other sets of chapathis in
the same manner. Press each round with hands into medium thickness.
Deep fry one by one in hot oil in medium flame. remove from fire
and sprinkle powdered sugar on both sides before serving.
