Cauliflower and Potatoes (Aloo Gobi)
Ingredients
1 medium Caulifower
2 medium Potatoes
1 Onion
1 Tomato
1 clove Garlic
1″ piece Ginger
pinch Turmeric
to taste Salt
to taste Pepper
to taste Garam Masala
Method
1. Make Masala with onion, garlic, ginger, and tomatoes.
2. Add turmeric and spices.
3. Break the cauliower in flowerettes and cut the potatoes into cubes (8 pieces each).
4. Add both to Masala and lower heat to simmer. Cover the pot until the cauliower and potatoes are coated.
Serve hot with rotis or rice garnished with coriander leaves.

Aloo Gobi - Variation
4 - medium sized potatoes
1/4 kg- cauliflower
1 - tomato
2 tsp - curd.
1 tsp - chilli powder
1 tsp - dhania powder
1/2 tsp - jeera powder
1/2 tsp - haldi
3 tsp - cooking oil
salt and coriander leaves.
Method
Cut the cauliflower into small sizes.Peel the potatoes and cut in cubes of 1 inch.Put the oil in a kadai and add the chilli powder, Jeera powder, Dhania powder, Hing, and haldi.Immediately add the Aloo cubes.
When all the Aloo pieces are nicely coated with the mixture, add the Gobi.Stir well, add salt and little water and cover the kadai and allow to in low flame, whencooked, add tomato (cut into wedges) and the curds and stir well for about 1 min.Remove from flame and nicely decorate with finely chopped coriander.
