Easy Vegetable Kurma

The article below features a recipe for Vegetable Kurma. On my mother’s insistence I named it easy vegetable Kurma. This Kurma is actually a side-dish to the Pulao that was posted previously but it goes well with Chapattis (Links is for a video) or Rotis.

This Kurma is a quick solution when you need something easy and quick as an accompaniment.

Ingredients:

  • Carrot, Beans, Peas, Potatoes, or any other leftover vegetables (diced and mixed) – 2 cups
  • Onion – 2 Nos.
  • Salt – as required

Grind Together:

  • Grated Coconut – 1 cup
  • Ginger – 1 small piece
  • Garlic – 2 to 3 flakes
  • Green chillies – 4 to 5 Nos.
  • Fried gram – 2 teaspoons
  • Cashewnuts – 6 Nos
  • Poppy seeds – 1 teaspoon
  • Cinnamon – 1 inch piece
  • Cloves – 2 Nos
  • Cardamoms – 2 Nos
  • Oil – 1 to 2 Tablespoons

Method:

Dice Onions into very small pieces. Cook all the other vegetables with the required amount of salt. Heat oil in a shallow pan; add the onions and fry a little. Add ground masala paste and fry till the raw smell is gone.

Then add boiled vegetables with enough water, boil till the gravy becomes thick.

Garnish with coriander leaves and serve hot. This Kurma suits Pulao, Chapatti, Puri or Set Dosa.

Milind, this goes well with Set Dosas, but you can surely try it for other Dosa varieties as well.
