Nithya from Chennai sends this handy recipe for Capsicum Rice. She says – “This is a delicious rice and it will good especially for the tiffin boxes”. I used to remember when I was in school and my mother used to pack my lunch box with all kinds of Vegetable Rice recipes.
The advantage with capsicum or with any othervegetable rice is that they are quick to make, delicious for a meal, and it stays relatively fresh for some amount of time. And if you are a bachelor or new to Indian cooking, this one gives you a good start to Indian cooking.

Capsicum Rice
Ingredients :
- 1 Big capsicum – 1 Inch pieces
- 1 Finely chopped onion
- Half cup grated coconut
- 1 cup rice – Boil it and keep aside
For the Masala:
- Black Gram : 1 and half spoons
- Channa dal : 1 and half spoons
- Cumin Seeds : 2 Spoons
- Curry leaves : 10
- Corriander seeds : 2 spoons
- Red Dry chilli : 5
Method:
1. Heat oil and fry all the masala items given above till the black gram turns brown and cool it and grind it into a fine powder
2. Heat oil add, Mustard seeds let it splutter and then add curry leaves , few Black and channa dal & Aesoftedia(optional).
3. Add the chopped onions and Capsicums and the grinded masala powder (3 spoons ) saute till the masal mixes with the capsicum.
4. Now add the grated coconut and saute for 2 min in sim.
5.Add the boiled rice to this mixture, add a spoon of ghee and mix the rice completly
6. Serve this with Fresh curd or Rice crispies.
Tip: This masala powder is very usefull.You can prepare Capsicum rice , Brinjal rice , Onion rice in the sililar way.
