Video - Carrot Kosambari (Salad)

I have known Kosambari or Kosmari as a traditional South Indian Salad. It is usually prepared and served as part of a long menu during special occasions such as festivals and weddings in Karnataka and Tamil Nadu.
The regular version of Kosumbari is the one with Cucumber. The other version is the one with Carrots. The video below shows you how to make Carrot Kosambari. This video comes courtesy of Hetal and Anuja from Show me the Curry.com.

Fresh Tomatoes are loaded with vitamins and antioxidants, especially lycopene. If you do not have a Salsa Garden, you need to consider planting one this summer, or find a good roadside stand that sells fresh tomatoes. These are original recipes for Italian Style tomatoes, a Summer Salad recipe that is so great and simple to make, this salad makes it’s own salad dressing with such a fresh flavor, you will make this salad again and again. Also a great Salsa Recipe and a positively delicious Stewed Tomato dish.
Italian Style Tomatoes Recipe
- 4 large tomatoes cut in wedges
- 1/4 cup olive oil, drizzle over tomatoes
- 1 teaspoon minced garlic
- Sprinkle with oregano to suit
- Sprinkle lightly with sea salt
- 1 loaf Italian Bread
Mix all ingredients together, except bread. Cover and refrigerate for 2 hours before serving. Tear bread into small bites for dipping in sauce.
Summer Salad Recipe
This salad makes it’s own salad dressing with such a fresh flavor, you will make this salad again and again.
- 1/2 head lettuce shredded with a knife, use a plastic lettuce knife if you can
- 1 small yellow onion diced
- 1 large ripe tomato chopped
- 1 or 2 heaping tablespoons of Hellmann’s Real Mayonnaise
- 2 tablespoons of water
Mix all ingredients together and refrigerate at least 2 hours before serving, add a little more mayo or water to your liking.
Salsa Recipe
- 4 ripe large chopped tomatoes
- 1 small onion diced
- 1 Jalapeno pepper diced
- 1/4 cup chopped fresh cilantro
Mix all ingredients and refrigerate 2 hours before serving. Serve with tortilla chips.
Stewed Tomato Recipe
- 3 large tomatoes, peeled and quartered
- 1 medium green pepper chopped
- 1 small yellow onion chopped
- 2 tablespoons sugar
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- slices bread
In large pan, saute green peppers and onion in butter on medium heat, stirring frequently until tender. Add Tomatoes, sugar, salt and pepper. Bring to a slight boil, then reduce heat to simmer for 25 minutes, or until tomatoes are tender. Remove the crust from the bread, tear bread into small strips and add to the stewed tomatoes, stir and let rest 10 minutes before serving.

These cucumber salad recipes come from our guest chef, Robin Svedi from Garden Cooking. He quotes:
Cucumbers are a good source of vitamins’ C, A and K. They are loaded with potassium and low in cholesterol, sodium and saturated fat. That’s all the information you are going to get from me on that subject. These are my own home recipes and I wouldn’t know where to start counting their calories. Relax, enjoy the fruits of your labor!

Greek Cucumber Salad
1 or 2 fresh-picked cucumbers
1 head of iceberg lettuce, torn into bite sized pieces
3 medium sized fresh tomatoes, sliced
1 small red onion
1 green pepper, diced
1 red pepper, diced
1 pound Feta cheese
˝ cup pitted Greek olives
˝ cup pitted black olives
Italian herbal style dressing
Combine the first 6 ingredients in a large bowl and mix well. Crumble the Feta cheese evenly over the top of the salad and then add the olives on top of that. To keep the salad from wilting, don’t add the dressing until you are ready to serve.
Makes 4 large or 8 small servings.
Simple Cucumber Salad
2 or 3 Fresh picked cucumbers, sliced
1/3 cup of red wine vinegar
1/4 cup granulated sugar
Combine the vinegar and sugar in a medium sized bowl and mix until sugar is dissolved. Toss in the cucumbers and voila! This recipe can also be used with fresh tomatoes or for a real taste treat, use both together.

Pasta Salad
2 cups Pasta (any type) cooked, drained and cooled
1 lg. Red or Sweet Onion (sliced fine)
1/2 can or about 25 ripe Olives sliced
1 med head Cauliflower, cut up
1/2 med sliced Mushrooms (optional)
1 cup Tomatoes cut (not small)
1 cup shredded Cheese
1 lg. Green Pepper (sliced fine)
For the dressing:
1 cup Vegetable Oil
2/3 cup Vinegar
4 Tbsp Lemon juice
3/4 cup Sugar
2 tsp Oregano
1 tsp Salt
1 tsp Pepper
1 tsp Garlic powder
Combine all ingredients. Add veggies and stir. Refrigerate atleast 3 hours. Overnight is best. Stir occasionally. Use any other vegetables you choose.
