Contributor’s Recipe: How to make Akki or Rice Roti

rice-roti-lavanya-flickrAkki Roti or Rice Roti is another specialty from South India, specifically from Karnataka. Made regularly in North Karnataka, it has a distinct taste.

Eaten with a smearful of butter or Ghee on top, it can be different dish for either breakfast or dinner.

Pronounced as Akki Rotti in Karnataka and Arisi Rotti in Tamil Nadu, it is one special South Indian dish that you want to try. This contribution for Rice Roti comes from Kala from Bangalore.

Make healthy Palak (Spinach) Pooris and Aloo Masala

Poori is generally associated with being unhealthy and lots of fat - this puts away many people who are health and weight conscious. Partly it has got to how the Poori is made. No effort is made to absorb the oil that the Poori soaks up after it is fried.

Simple hints like using a sieved (porous pan) container to drain the oil, and use of tissue paper should reduce the fat content greatly. I’m here to take health-conscious Puri eating to another level :-) ; I’ve got Palak Poori today as your breakfast / evening snack that is not only healthy but tasty as well. Eaten with Aloo Masala, it makes a great dish to entertain your family and friends with your culinary skills.

How to make Paniyaram

What do you call Paniyarams in English - Great Balls of Food? Ever since I was a kid, I used to love Paniyarams just by thier shape and size. Even though they look sinister, it’s hard to resist once you’ve tasted it. It’s another variant of the Dosa, made out of almost the same ingredients; crisp on the outside and soft on the inside. Best eaten piping hot on a morning or on a cold evening.

They are made of a special vessel / pan with Kuzhis or semi-circular pits where the batter is poured. Chutneys go well along with them. The ones in the photos, they were made with the same batter used in Uthappams.

I know it by three names:

GundBangla (I don’t know from which language, maybe Telugu)

Paddu in Kannada

Paniyaram in Tamil

Breakfast special: Tomato - Capsicum Uthappam

After dining out this week and splurging on North Indian food, it was back to typical but extremely addictive South Indian Cooking. And my mom made the popular Dosa variant, Uthappam (also pronounced Oothappam). Usually it’s made of boiled rice (a plain Uthappam Recipe is here), but we were given with toppings of Onion, Tomato and Capsicum.

If you don’t know what is Uthappam, here’s what wikipedia has to say

Uthappam is a Dosa-like dish that is made by cooking ingredients in a batter. The batter is made of a 1:3 ratio of urad dal and rice (1:1 ratio of boiled to non-boiled rice) that has been fermented. They are usually made with tomatoes or an onion-chilli mix; other common ingredient choices are coconut or mixed vegetables. Uttapam is also sometimes called an Indian pizza or pancake.

What is a Tortilla?

Tortillas are flat breads which are very similar to Indian Roti and Chapati. For any Indian visiting the US or spanish speaking countries, Tortillas may actually make you feel at home. It is highly popular in Mexico and Spain.

 

Usually consisting of egg as the main ingredient, there are flour and corn tortillas which are alike to the Indian flat bread.

The two types of Tortillas

Mexican and Spanish Tortillas are not to be confused as they are two very different dishes. Likewise this Spanish omelete is only a distant cousin to the French omelette as it is not folded but is quite thick and flat and normally contains potato and sometimes bits of meat or other vegetables.

 

Traditionally the Spanish tortilla was taken by the peasants into the fields where it was eaten cold between two slices of homemade bread covered in olive oil.It is often served in slices, again cold, in tapas bars. However it can equally well be enjoyed hot with a side salad and some crispy bread and as such is an important part of the health giving Mediterranean diet.
