Weekend Cooking - Peas and Corn Pulao with Onion Raita

Don’t you think weekends are those days of the week, where you are confused what to cook? My mother poses the same question to us and I just say any dish that comes to my mind, just like in a restaurant. My mom, of course doesn’t mind my jokes :)

Pulao is one dish that I’ve tasted on many Sundays and still be liked by all. This weekend, was time for Pulao (or Pulav?) again, but with a twist. I asked here, while cooking how does she make a dish more interesting. Adding your own ingredients or flavor to a ‘normal recipe’ can make any cooking more interesting and the dish tastier and more exciting to eat. I guess this comes more out of experience.

Sankranti / Pongal is round the corner (Jan 14th) and it’s time for a new harvest season all over India.In South India, Pongal signifies planting of new crops and thanking the gods for all the prosperity last year. Another festival celebrated with similar vigour is Ugadi.

 

The main dish during Sankaranti is the Sweet Pongal or Sakkarai Pongal (in Tamil) or Sakkare Pongal (in Kannada) or ChakraPongali (in Telugu).

Sprinkled generously with cashew nuts and a mixed with Ghee, it makes for a delicious start to the New Year.

Quick Snack - Stuffed Chilli Bajji Recipe

Sujata Ramachandran sends this Stuffed Chilli Bajji recipe. The weather is cold here in Bangalore and I believe in other parts of India as well. This is the time when hot snacks and chaatwallahs make thier best business. In South India, Maneshinakayi (Chillies) Bajjis are very popular (Kannada version). Chilli Bajjis originate from Andhra Pradesh. They are usually eaten as a snack or as an accompaniment or side-dish with Rice.

In Bangalore, these are usually made by road side vendors who make hot Chilli Bajjis along with other snacks like Pakoras and Bondas.

The Chilli used for the Bajji is a bigger one and is usually used for making Bajjis only. It is believed that this Chilli originates from Andhra and is supposedly the best ones to be found. It is referred to as Bajji Maneshinakayi (in kannada) or Bajji Milagai(in Tamil).

Easy Side-dish: Tomato Dhal Curry

Being a bachelor and an amateur cook, I’ve found tomato fry to be a quick curry / side-dish especially for Rotis and Chapattis.

This one adds a bit more masala with toor dal and chana dhal along with a dash of chopped onions to go in the curry.
