Chinese Fried Rice

Fried Rice has to be one of the popular recipes that you find in Indian restaurants today. Along with the usual Rotis and South Indian dishes, you can expect to see different variations of the fried rice on the menu.

One of our guest readers at Indian Food Kitchen, Niti Sharma from Delhi submitted this recipe for Chinese Fried Rice.

What probably differentiates Chinese fried rice from Indian fried rice recipes is the use of the Soya sauce, spring onions and almost no usage of any other spices or masalas.

Guest Recipe: Thengai Araitha Kuzhambu (Coconut ground gravy)

Kuzhambu (or Kulambu), is similar to Sambar, but a little thinner in the gravy. Tamil Nadu has lots of varieties of Kuzhambu to appeal both vegetarian and non-vegetarians.

Lakshmi from Chennai shares this recipe for Thengai Araitha Kuzhambu which means gravy from ground coconuts. She says

“This goes the best with Rice, Idly and Dosa. Don’t forget to add a teaspoon of ghee to your rice…..mmmmmmmm……”

In my house Sambar and Kuzhambu are always made and served in thick aluminum pots which adds it a traditional touch and flavor.

Guest Recipe: Appalam (Papad) Kootu

Kootu is a thicker version of Sambar and Kuzambu and comes from Tamil Nadu. Though I don’t like Kootus as much as Sambars they make for a good substitute and as a side dish for Chapattis.

Maria Raj from Chennai, a guest at Indian Food Kitchen has submitted this interesting recipe which combines the Kootu with another snack, Appalam (or Papad). Have this Kootu with Rice, Dosa or Chapattis.

Video - Carrot Kosambari (Salad)

I have known Kosambari or Kosmari as a traditional South Indian Salad. It is usually prepared and served as part of a long menu during special occasions such as festivals and weddings in Karnataka and Tamil Nadu.

The regular version of Kosumbari is the one with Cucumber. The other version is the one with Carrots. The video below shows you how to make Carrot Kosambari. This video comes courtesy of Hetal and Anuja from Show me the Curry.com.

Weekend Dinner - Channa Pulao

Pulao is a great party dish. It’s loved by many and can make cooking for a group fun. That is the opinion that my mother has on party cooking. So instead of the regular Pulav, variations will help in making the meal different and tasty. A few days back I had Corn and Peas Pulao for weekend lunch.

This Sunday, the main dish was Chana Pulao. Chana - also called as Bengal Gram, chickpeas, Garbanzo Beans etc is used in many Indian dishes especially curries. This recipe can be made for either lunch or dinner and goes great with either raitas or vegetable kurma.
