Carrot Saag

Ingredients:

Carrot - 1/2 kg
Tomatoes, medium sized - 2 or 3
Coconut, Scraped - 1/2 cup
Green chillies - 6
Ginger - 1/2 piece
Garlic - 6-7 flakes
Poppy seeds - 1 tsp
Onion, big - 3
Cardamoms - 2
cloves - 2
Cinnamon - 1 inch piece
turmeric powder - 1/4 tsp
Salt as required
Oil - 1 Tblsp

Method:

Grind scraped coconut, green chillies, ginger, garlic and poppy seeds. Scrape the carrots and cut into very small pieces and cook it just as you would any other vegetable. Heat oil in a pan; Add the rest of the spices and onions. and fry it. When it is done, add chopped tomatoes and fry for 8 -10 minutes. After that , add carrots and the ground mixture with enough water. Boil till the gravy thickens.
