Biraj
Ingredients:

2 cups rice
-
1 cup cooked channa dal
-
2 cups sugar
-
1 tsp. cardamom seeds.

A few drops essence of saffron.

12 almonds. 12 pistachios and 12 cashewnuts.

25 grams each of raisins and charroli.

Silver foil
Method:
Blanch, fry and slice the nuts and raisins. Wash and soak rice in water for a few hours and drain. Heat 4 tblsps. ghee and put in the rice and cardamoms and fry to a light golden colour. Pour in 4 cups water.
Bring to a boil, reduce heat and cook till the rice is almost tender and dry. Put in the dal and sugar, mix thoroughly and continue cooking till the rice turns tender and dry.
Remove from fire and mix in the nuts, raisins and essence. Serve decorated with foil.
